Chez Suzette: The Art of French Dining Arrives in Pampanga

What if the closest thing to a French restaurant isn’t in France, but just around the corner?

For diners in the greater Metro Clark region, the answer may well be Chez Suzette, the newest French dining destination standing prominently beside the Clark Parade Grounds. Housed inside a charming barn structure, the restaurant offers something that goes beyond French cuisine. It presents a complete French dining experience, one built around hospitality, tradition, and the simple pleasure of lingering over a meal.

The story begins with founder and owner Suzette Simon-Tingaud, who recalls falling in love with a barn house inside Clark long before it became the Chez Suzette. Today, that affection has evolved into a space that reflects her vision of bringing an authentic slice of France to Clark.

“We want to offer a 100 percent French food experience,” she shared during an intimate media gathering.

That commitment extends far beyond the menu. The restaurant assembled a team trained in French culinary culture, led by General Manager Kelvin Guegnon, who personally trained the executive chef for three months. Together, I can see that they have cultivated a dining experience where cuisine and service work hand in hand, creating the sense of being welcomed into a French establishment rather than simply dining at one.

The opening of Chez Suzette also reflects a larger shift in Clark’s evolving culinary identity.

Why does every city need a great French restaurant? Because French dining has long been regarded as a benchmark of culinary excellence. It celebrates craftsmanship, technique, hospitality, and attention to detail. The arrival of Chez Suzette signals Clark’s growing appetite for elevated dining experiences while adding another layer to the region’s increasingly diverse food scene.

For Simon-Tingaud, joining Pampanga’s respected culinary community was always part of the vision.

“We want to be part of Pampanga’s culinary excellence,” she explained. “We also want to contribute to the diversity of Clark’s dining scene by bringing French cuisine.”

The restaurant already carries an international pedigree through its sister branch in Singapore, but its Clark location embraces a distinct sense of place while remaining deeply rooted in French traditions.

Among those traditions is the concept of the French brasserie.

A brasserie is a cornerstone of French dining culture. Traditionally, it is a lively restaurant serving classic French dishes throughout the day in a warm and welcoming setting. Less formal than fine dining establishments yet more refined than casual cafés, brasseries are designed to be gathering places where guests can enjoy good food, conversation, and hospitality at a comfortable pace.

Chez Suzette embraces this philosophy beautifully.

One of its most distinctive features is the veranda, which serves as an invitation to participate in another beloved French ritual: the aperitif.

An aperitif is a pre-meal drink enjoyed to stimulate the appetite and encourage conversation before dining. In France, it is as much a social custom as it is a beverage. Friends gather, exchange stories, and ease into the evening before heading to the dining table.

At Chez Suzette, guests are encouraged to begin their experience outdoors on the veranda with an aperitif, move indoors for the main meal, and then return outside afterward to continue conversations beneath the Clark sky. It is a thoughtful touch that transforms dinner into an occasion.

During the restaurant’s media preview, the menu offered a glimpse into the breadth of French culinary traditions.

Cold starters showcased both elegance and technique. The Gravlax de Saumon featured delicately cured salmon prepared in the Nordic-French style, silky and refined in texture. Equally impressive was the Pâté en Croûte, a classic French preparation that wrapped Bresse chicken, liver, pork, pistachios, Cognac, Madeira, and port inside a beautifully flaky crust.

The Salade Niçoise brought a taste of the French Riviera through vibrant vegetables, white anchovies, and olive oil dressing that highlighted freshness rather than complexity.

Warm starters celebrated some of France’s most beloved comfort foods. The Gougères arrived as golden choux pastries infused with aged Comté cheese, airy and savory with every bite. The Escargots de Bourgogne, perhaps one of the country’s most iconic dishes, delivered tender Burgundy snails enveloped in aromatic garlic-herb butter.

For the main courses, the kitchen showcased the depth and richness often associated with French cooking.

The Côte de Bœuf featured prime rib grilled to emphasize its natural beef flavor, accompanied by red wine sauce, grilled corn, and broccoli.

Meanwhile, the Bouillabaisse paid homage to Provence through a fragrant seafood stew infused with herbs and saffron, balancing rustic origins with refined execution.

Dessert provided a fitting finale.

The Profiteroles remained faithful to French tradition, pairing delicate cream-filled choux pastries with rich chocolate sauce. The signature Crêpes Suzette brought a touch of tableside theater as delicate crêpes were flambéed with orange butter sauce and Grand Marnier liqueur, filling the room with citrus aromas and warmth.

Open daily from 11 a.m. to 10 p.m. and accommodating approximately 50 to 60 guests, Chez Suzette arrives at a time when Clark’s dining landscape continues to mature and expand. Yet what makes it memorable is not simply its menu or its location beside one of the city’s most recognizable landmarks.

It is the feeling that for a few hours, diners can slow down and embrace a distinctly French way of dining.
