Members of the Pampanga Press Club had the privilege of an exclusive sneak peek into their upcoming seven-course degustation menu, launching this April 2025 at Php 1,500 per person. This tasting experience offers a curated journey through flavors, textures, and techniques—allowing guests to enjoy everything in small bites.

Wu Xing, the signature Chinese restaurant of Clark Marriott Hotel, brings a refined take on modern Cantonese cuisine. Known for its traditional wood-roasted Peking duck, this upscale dining destination masterfully balances authenticity and innovation. Located at the lobby level of Clark Marriott Hotel, Wu Xing features a sleek, contemporary design that pays homage to Chinese artistry. With five private dining rooms and a capacity for 106 guests, it caters to both intimate gatherings and grand celebrations. Roasted Beijing Duck

Top favorite! Smoked for 72 hours-as expected-exuded a lovely lingering aroma after inspecting the filling and loved succulent meat infused with layers of smokiness. I was surprised with the addition of fresh leeks adding a sharp, aromatic contrast. I noticed that each chew unraveled a rich depth, leaving behind a lingering, savory aftertaste that made me wish to have more servings of it. I really wish!!

Scallop Dumpling with Shrimp, Squid Ink Wrapper, and Gold Leaf

Don’t mistake this for a usual Japanese siomai. This dim sum showcased premium ingredients wrapped in an elegant black squid ink casing, glistening with a touch of edible gold leaf. The first bite revealed a tender yet bouncy texture, with the sweet, briny flavors of scallop and shrimp unfolding seamlessly. The gold leaf, delicate as it was, offered a unique sensation on the tongue, a subtle yet luxurious finish. Can I make “sangla” of the gold leaf? Kidding!

Spinach Soup with Fish Maw

A light yet deeply satisfying, umami-rich, bowl of lovely green soup that played with texture and restraint. The broth carried a mild, leafy freshness from the spinach, while the fish maw introduced a soft crunch.

Homemade Tofu in Abalone Sauce with Shimeji Mushrooms

The homemade tofu, smooth and velvety, married well with the abalone sauce, creating a delicate yet umami-rich bite. The shimeji mushrooms added an earthy contrast and texture. A dish of quiet sophistication.

Roasted Pork Belly with Chinese Mustard

A masterclass in texture at the time it was served. The pork belly arrived with a crackling, golden skin that could have shattered with a satisfying crunch. By looking at it, the cubes revealed layers of rendered fat and juicy, tender meat. If you are a reader of my site, you would know I wouldn’t try it because I don’t eat pork.

Wok-Fried Prawn in Oyster Sauce with Jasmine Rice

The prawn, plump and perfectly cooked, carried a natural sweetness that paired beautifully with the umami depth of the oyster sauce.

Mango Cream Sago with Pomelo Flakes

A tropical conclusion to an exquisite meal – truly loved the smooth and decadent, enveloped the chewy sago pearls in its velvety embrace. The pomelo flakes added bursts of citrusy yet slight tart, creating a contrast that kept each spoonful refreshing.
