El Nido is already known, globally, for its stunning beaches, crystal-clear waters, and laid-back island vibes, but on my recent trip by Cebu Pacific Air, I discovered that this beyond-the-ordinary resort paradise is also home to a new culinary set of gems. The Funny Lion El Nido’s Hunt Restaurant offers a dining experience that complements Northern Palawan’s natural beauty. This April 5, they unveiled an exciting new menu that blends locally sourced ingredients with bold international flavors, making it a must-visit for everyone.

From fresh seafood to smoky tandoori chicken and decadent desserts, each dish felt like a journey of its flavor source. Mind you, all of the kitchen staff are Filipinos. You would be surprised on how the flicked together their magical kitchen utensils to conjure such exploding tastes. If you are looking to make your El Nido getaway #BeyondTheOrdinary with exceptional food, Hunt Restaurant should be at the top of your list. Here’s my take on the new standout dishes that will surely make your taste buds dance with delight.
Cured Mahi Mahi – My, oh Mahi

The orange liqueur-cured fish carpaccio immediately caught my attention with its vibrant colors and delicate slices. The mahi-mahi was tender yet firm to the bit, with a mild yet refreshing citrus kick from the orange liqueur that played beautifully with the sweetness of the watermelon discs. The fried basil added a savory crunch, and the red onion and capers brought just the right amount of sharpness, balancing the dish perfectly. This was a refreshing starter that immediately set the tone for the meal.
Tandoori Salad – Tandoori Tosser

The Tandoori Tosser was a feast for both the eyes and the taste buds. The grilled tandoori chicken was tender, with that identifiable smoky, aromatic spice that tandoori is known for. Each bite of chicken was complemented by the sweetness of raisins and the tang of pickled guava compote. The crispy cucumber and red onions added a layer of crunch, while the cilantro rounded everything off with a burst of freshness. The bed of greens held it all together, making this a hearty yet balanced salad that could easily be a meal on its own. This is my favorite!
Braised Beef Ragu – Al Ragu

The moment I twirled the al dent pasta coated in that rich, creamy braised beef ragu, I knew I was in for something special. The aroma itself alone left me drooling while taking photos. The beef was indeed tender, and the creamed mushroom sauce added a depth of dairiness to the dish. It was comforting, hearty, and downright delicious. I finished half of the serving!
Aloha Bowl – Kalua Pork

Next up was the Aloha Bowl with slow-cooked Kalua pulled pork. Since I do not eat pork, I asked my tourmates about their verdict. Ms. Roxanne of Cebu Pacific Air told me that the tenderness of the meat and the flavor certainly popped out. Doc Kim Kantos also mentioned that the pork meat can be a filling for a cuapao dish.
Grilled Sambal Prawns – Penang Prawns

This is a clear definition of a “to die for” dish. I love sambal and having this over tender prawns was like a rare wish granted by a genie. The grilled sambal prawns had a fiery kick that I absolutely loved. The prawns came with a smoky char that paired beautifully with the spicy sambal sauce. The pineapple coconut ice served as a cool, refreshing contrast to the heat, and the crispy shallots added a savory crunch. Have it both on your spoon creates that lovely seesawing effect of the flavors as you chew. This immaculate dish brought the house down, I certainly tell you!
Frozen Cookies and Cream Pie

Finally, for dessert, the frozen cookies and cream pie was an absolute treat. I am not a sweet tooth but these frozen called me to down to servings of it !The bold and deep creamy, rich filling paired perfectly with the crisp, buttery crust. It was the perfect way to end an extraordinary spread.

Overall, Hunt Restaurant has truly outdone itself with these innovative dishes, delivering that “Beyond The Ordinary” promise. If you would be in El Nido, don’t miss the chance to experience these culinary delights!
