On October 8, 2024, Rare Bar and Grill officially opened its doors at Quest Plus Hotel and Conference Clark, marking a new destination for premium steak, handcrafted cocktails, and dry-aged meat lovers and those seeking a personalized interactive service and upscale dining experience. The grand launch, which I think is titled Time for RARE Occasions, was a celebration of exceptional food, elegant ambiance, and refined hospitality. Hosted by the ever-charming Ms. Issa Litton, who graced the event in a sleek green cocktail dress, the evening was an inviting mix of style and substance.

As invited guests arrived, they were greeted with welcome drinks and a selection of finger foods, setting the tone for a night of sophistication. The event began with a warm welcome from the Hotel Manager Michael Gapin, followed by a speech from the Culinary Director Jean Louis Leon. Eschewing the typical ribbon-cutting ceremony, Rare Bar & Grill opted for a more fitting gesture—a steak-cutting ceremony that symbolized the beginning of an extraordinary culinary journey.

This dish was an artful balance of textures and flavors. The tender salmon trout, perfectly seared with a crispy exterior, was complemented by the delicate crunch of crispy hito. The combination of chilis, spring onions, and ponzu sauce added a punch of umami and heat, enhancing the freshness of the fish.

Accompanied by roasted carrots, confit garlic and onion, hand-cut fries, and green beans, the Rib Eye Steak was another showstopper. Its higher marbling score ensured each bite was packed with deep, beefy flavors. Served with a trio of sauces—chimichurri, burgundy, and barbecue—each element of the dish was carefully crafted to highlight the natural flavors of the premium cut. The fries, golden and crispy, provided the perfect contrast to the juicy, succulent meat.
