CALLE ARCO: A Taste of Tradition and Heritage in Pagsanjan

Calle Arco Restaurant stands as a culinary treasure of the town of Pagsanjan, offering a unique journey through time and taste. This ancestral home-turned-restaurant is not just a place to dine; it is a portal to the rich history, culture, and cuisine of Pagsanjan – a living museum. The building itself is steeped in history, with roots that trace back to the colonial era. The restaurant gets its name from the “arch,” or “arco” in Spanish, that spans the street in front of the house, creating a charming and picturesque scene. It is actually declared as a National Treasure by the National Commission for Culture and the Arts (NCCA).

Sharing Lunch at the Calle Arco is part of the itinerary for the recent PHILIPPINE EXPERIENCE PROGRAM – CALABARZON Leg of the Department of Tourism. Because of the historical value and the delightful array of dishes they serve, it is truly worth dining at Calle Arco Restaurant. Marvelling at the warm and colonial-style interiors, I always wonder if the walls could speak and say stories they witnessed through the century.

Signature Homestyle Dishes We Tried

  • Pork Binagoongan is a mouthwatering Filipino classic that never fails to satisfy the craving for savory and slightly sweet flavors. The tender pieces of pork, stewed in shrimp paste, deliver a delightful combination of umami and a touch of sweetness. The bagoong (shrimp paste) is made from their family heirloom recipe.
  • Sinigang na Baka na may Langka is the epitome of comfort food in the Philippines. This sour soup, flavored with unripe jackfruit (langka), adds a unique sweetness to the tangy broth. The Beef portions provide a delightful contrast to the vibrant flavors, while the cuts are a bit tough. It’s like a warm hug on a rainy day, a symphony of sour, savory, and sweet notes in every spoonful.
  • Garlic Fried Chicken is a testament to the Filipino love for fried dishes, and this one is a crispy, aromatic masterpiece. The chicken is marinated with garlic and spices, then double-fried to achieve that irresistible crunch. The result is a tender, juicy interior enveloped in a golden, garlicky shell. Each bite is a symphony of textures and flavors, and it’s my top favorite among the ensembles.
  • Sweet and Sour Plapla is a delightful blend of flavors and textures, featuring crispy whole large Plapla fish bathed in a sweet and tangy sauce. The sauce strikes a perfect balance between sugary and zesty, while the vegetables add a refreshing crunch.
  • Pinakbet is a vegetable medley that highlights the rich bounty of Filipino agriculture. A colorful array of vegetables, such as eggplant, bitter gourd, and string beans, is sautéed with shrimp paste, garlic, and tomatoes. The result is a wholesome, hearty dish that celebrates the natural flavors of the produce. It’s a great choice for vegetarians and those seeking a healthy option.
  • Camote de Leche: We conclude our culinary journey with a sweet and indulgent treat, Camote de Leche. This dessert features sweet potatoes, locally known as camote, cooked in sweetened milk until they become tender and caramelized. The result is a creamy, melt-in-your-mouth delight with a hint of smoky sweetness
