After the pivotal flag-raising ceremony that kickstarted the Philippine Experience Program – CALABARZON, we tried dishes like a true Caviteño with a hearty and protein-rich Magdiwang Breakfast buffet style. We queued together with all the participants and enjoyed the aroma that filled the external halls of the Aguinaldo Shrine.
The centerpiece of the Magdiwang Breakfast is a spread of delectable locally sourced ingredients that reflect the culinary heritage of Kawit and the surrounding regions. Let’s explore some of the key dishes of this historical feast:
- Beef Tapa: Tender bite sizes of marinated and cured beef are pan-fried to perfection, resulting in a savory and slightly sweet delicacy that is a staple of Filipino breakfasts.
- Atchara: A medley of finely julienned fresh papaya, onions, and vinegar, the Atchara adds a refreshing and tangy dimension to the meal, balancing the richness and flavor profiles of the other components.
- Tinapang Salinas (Smoked Fish): This smoked fish, usually sourced locally from the shores of Cavite province, is a smoky addition to the breakfast ensemble. It provides a hint of smokiness and saltiness that pairs wonderfully with the tangy elements of the Magdiwang Breakfast Meal set.
- Kesong Puti: a salty and creamy smooth textured cheese wrapped with banana leaves. Best paired with pandesal.
- Longganisa: a typical Filipino sausage but this version has a stronger garlic taste profile and chunky meaty texture that goes well with the atchara.
- Pandesal: the ubiquitous and universal typical Filipino breakfast rolls that complement many spreads and “palaman”.
The Magdiwang Breakfast is more than just a gastronomic experience; it is like consuming history and a testament, as well, to the Kawit’s commitment to preserving its culinary heritage. Many of the ingredients used in this meal are locally sourced, reflecting the town’s connection to its natural surroundings.
The Magdiwang Breakfast of Kawit, Cavite, is not merely a simple or usual meal; it’s a journey into the past, a celebration of culture and heritage, and a testament to the resilience of the Filipino spirit. By savoring this historical breakfast, you not only indulge in a delicious feast but also connect with the traditions and heritage that continue to shape the identity of Kawit and the Philippines as a whole. So, when you find yourself in Kawit, don’t miss the opportunity to start your day with a taste of history and a plateful of cultural richness.
After our hearty breakfast, we had a brief guided tour around the historical complex. We began at the open grounds where the historical highlights and significance of each existing element were discussed. Even the traditional way of doing laundry is still intact.
After which we proceed to the museum section where memorabilia of our First Ever President of the Philippines are on display. Pieces of clothing, dioramas, political artifacts, and books are also curated and categorized to fit the museum tour.
It is truly noteworthy to have learned details about the personal and political life of Emilio Aguinaldo. Also, we had an opportunity to see the residential floor and marveled at the key architectural wonders that made living comfortable during those years. Apart from traditional comforts, our guide has discussed different strategies for room layouts that would save the incumbent president in times of emergencies or insurgencies.
Visiting Aguinaldo Shrine truly is a must – for both students and adults. More than historical significance that brings pride to us being a Filipino – but also stories of grit and sacrifice that laid the foundation of the very first Democratic Constitutional Republic in Asia.
